Orecchiette coi Broccoletti



I came across this recipe in a book called 'Silver Spoon Pasta.' It's orecchiette (little ears pasta) with broccoli.

Pasta:
1 cup semolina
1 cup all-purpose flour
1 cup warm water
1 tsp salt
(actually, the recipe in the book says to use 1 3/4 cup all-purpose, and 1/2 cup semolina)

Topping:
small broccoli florets
minced garlic
chili flakes

I like the combination of broccoli with pasta, garlic, and chili.

However, the orecchiette came out very tough. The dough was hard to work with. Though all the recipes I've seen don't include eggs, I should use an egg or two next time, and probably use more flour than semolina. I also made them too large and didn't boil them long enough. Oh, well... these are all things to try next time.
