Adobo Chicken

As far as I'm concerned, there are two foolproof methods to making meat: Marinate it as long as possible, and don't overcook it.

Adobo chicken (or pork) is a Filipino style of marinating. It's simple, and effective:
  • 4 Chicken breasts
  • 1/2 cup vinegar
  • 2 Tbsp soy sauce
  • 2 cloves sliced garlic
The key here is to MARINATE FOR AT LEAST 24 hours, then grill to perfection.

The result is a beautiful deep red/ brown tender and tangy chicken. I have a feeling that the acidity from all the vinegar helps to break down the meat, much like a ceviche.
