Waffles

I've made this recipe numerous times, with great success.  It is adapted from the basic waffle recipe in The Joy of Cooking.

Yield:  7 Waffles.

Sift into a large bowl:
  • 1 3/4 cups All-Purpose Flour
  • 1 Tbsp Baking Powder
Whisk together in a second bowl:
  • 3 large Eggs
  • 3/4 cup Plain Yogurt*
  • 3/4 cup Milk*
  • 1/4 cup Butter, melted (more butter is more better)
  • 2 Tbsp Vanilla Extract
  • 1 Tbsp Sugar (more if you like 'em sweet)
  • 1/2 tsp Salt
*Substituting 1 1/2 cups buttermilk for plain yogurt and milk also yields great results. 

Add the wet mix to the dry mix and whisk with a fork until just combined and still a bit lumpy.  Let sit for 20 minutes, if possible.

Preheat waffle iron.  No need to grease/ oil the iron if it is non-stick.  Add a heaping 1/3 cup of batter for each waffle, and gently spread the batter evenly across the iron.  Remove 1 minute after "ready" light goes on, and SERVE IMMEDIATELY.
