I watched Ashok whip up this chutney today, as a compliment for some chicken skewers.
It consisted of lots of fresh mint leaves, cilantro, green onions, hot peppers, coarsely chopped onions, salt, and vinegar. I think there was also a splash of citrus juice. All of this was thrown into a food processor and blended into a fine sauce. The contrast between mint and hot peppers was excellent, as was the contrast between vinegar and cilantro.
