I decided to make a tapenade last night.
I mixed the ingredients in a bowl - kalamata olives, lemon juice, olive oil, cracked pepper, garlic, and green onions - then blended.
Needless to say, it was terrible. I blame the olives - they were extremely salty, and didn't taste great to begin with. I totally added too much lemon juice, and probably too much raw garlic.
Next time I decide to make tapenade, I'll be sure to start off with better, mellower olives... ones that have very little salt... then slowly add the other ingredients, and taste frequently.
