Soba Noodles

This is one of the salads that we make at work. It's not a top seller, but I think it's great. Very refreshing. I haven't made it before, but I've seen them make it and wrote down the recipe:

2.5 Kg soba noodles
2 bunches cilantro, chopped
2 lb shiitake mushrooms, sliced
1/2 100 oz can of roasted red peppers, julienne
3 bunches green onions, sliced on an angle
1.5 litres cashews, toasted

"Asian" Dressing (larger batch than needed):
1 litre soy sauce
750 mL rice vinegar
1 cup sesame oil
2 L canola oil
2 cup brown sugar
2 cup black sesame seeds

Cook the soba noodles in boiling water for 5 minutes, then rinse with cold water. Mix in all the other ingredients and dress with "Asian" dressing. Garnish with cashews and some more black sesame seeds.
