Spelt Hemp Seed Bread

I stumbled across some hulled hemp seeds at the bulk store today. It reminded me of a spelt hemp bread that somebody in the Yoga Club use to make, and though I never tried it, it was rumored to be great.

This recipe came up after some googling, and it looked reasonable:
  • 900 gram flour - Spelt or unbleached white, plus 50 grams for dusting
  • 50 grams hemp flour
  • 100 grams seed, finely ground to hemp meal
  • 2 teaspoons of salt
  • 3-4 dessertspoons hemp or olive oil
  • For the starter: 700 ml warm water and 3 good teaspoons each dried yeast and brown sugar
I originally set out to make a half recipe (1 loaf).

I used 5 teaspoons of yeast and let it sit in a warm spot for at least 30 minutes in order to ensure fluffiness.

After some mix-ups I ended up doing this: About 500 ml of the starter mix, 3 cups of spelt flour, roughly 3/4 cup of whole wheat flour, probably 1 cup of regular wheat flour, a handful of buckwheat flour, and 75 grams of hulled hemp seeds. This dough was kneaded in the mixer for 7 to 10 minutes, formed into 2 cylinders, and allowed to rise for 1 hour. The doughs were sprinkled with hemp seeds, salt, and buckwheat flour.

I baked 1 loaf on the top shelf of the oven at 400F for just under 30 minutes, and froze the other as an experiment.

The resulting bread was fluffy, with a nice crust, and hearty. I think it's great, but I'm also more open to these types of bread than most people.
