There are 2 similar cold pasta salads that we make at work that are bright and delicious. I won't give an exact recipe, but I'll give the gist...
- Pasta, cooked and cooled
- Roasted tomatoes, pulsed once through the food processor
- Red onions, julienned
- Parsley
- Basil
- Zest and juice of MANY lemons and limes
- Rockets, spinach, or other greens
- Salt and Pepper
The key ingredients are the citrus and the roasted tomatoes. We roast off any mushy tomatoes that are lying around with some oil, salt, pepper, and herbs for about 1 hour. It's nice to leave them pretty chunky in the salad.
Variations:
1) Penne with fetta cubes
2) Large pasta shells with canned tuna
