Florentine Meatballs

I made these today at work... it's really just a variation of hamburger... it's a large recipe, but you get the idea:
  • 15 lb medium ground beef
  • 1/2 cup minced garlic
  • 1.75 lb finely chopped spinach
  • 1 bunch finely chopped parsley
  • 1/2 cup red wine
  • 1 1/2 cups tomato paste
  • 1.5 L panko
  • 7 eggs
  • 2 Tbsp chili flakes
  • 2 Tbsp dry basil
  • salt and pepper
Form and bake or grill until the inside has reached 155F.

They came out pretty nice and juicy... nothing overly special. Note that we don't include parmesian cheese in our recipe, which seems to be an authentic/ traditional ingredient for Florentine Meatballs.
