Potato Salad

I made potato salad at work this week. Though I'm not a big fan of potato salad, this one's pretty good.
  • 15 lb Yukon potatoes
  • 375 mL olive oil
  • 1 cup pickles, minced
  • 1 bunch parsley
  • 1/4 cup smooth Dijon
  • 1/4 cup grainy Dijon
  • 30 mL red wine vinegar
  • Salt and Pepper to taste
I cut the smaller potatoes into quarters and the larger ones into sixths. Put them into the steamer for 15 minutes until slightly soft, then stuck them into the cooler.

I mixed all the ingredients together in a large bowl, and adjusted the seasoning.
