This is a basic hummus from scratch, nice and creamy - just the way I like it.
1 can Chick Peas (2 cups), rinsed thoroughly
2/3 cup fresh Tahini
3/4 cup water
1/2 cup olive oil
pinch of cayenne
1/2 lemon - juice and zest
salt and pepper to taste
Combine ingredients in a food processor and blend, blend, blend. Then blend some more. Make sure you scrape the sides down and taste it occasionally. Refrigerate, and enjoy.
