Pasta From Scratch


Now that Passover is done, I can embark on my journey of making fresh pasta at home.

Today, I went with the 'Joy of Cooking' recipe for basic pasta:
  • 2/3 cup flour
  • 1 egg
  • 1/2 teaspoon salt
  • 1 Tablespoon water
  • 1 teaspoon oil
Actually, I forgot to add the oil. I sifted the flour and salt, then created a well and placed the water and egg into it. Encorporated the dry into the wet, then kneaded for 10 minutes. Covered, let it sit for 1 hour, rolled it out into a very thin sheet, cut it by hand lengthwise, then hung it to dry for 30 minutes.

I whipped up a quick sauce with LOTS of garlic, a good olive oil, and halved cherry tomatoes. Sauteed it briefly, then poured it over the cooked pasta.

The pasta was pretty good for a first attempt... a tad chewy (because of the forgotten oil?) and unevenly cut, but the pasta machine might fix that.
