
Day 2 of pasta adventures: Today I used the pasta machine, and remembered to include oil in the dough. Same recipe as yesterday:
- 2/3 cup flour
- 1 egg
- 1/2 teaspoon salt
- 1 Tablespoon water
- 1 teaspoon oil
The oil made the dough smoother and easier to handle, while the pasta machine was a pleasure to work with... it cut the time down dramatically. I thinned the dough to number 7 out of 9, then formed it into angel hair with the machine.
I topped it off with a lentil sauce:
- 4 cloves garlic
- 1 small onion
- 2 medium tomatoes, chopped
- 1 cup cooked regular green lentils
- dash of red wine
- pinch of sugar and cayenne
- salt and pepper
Today's pasta was a lot mushier; I would guess that's because of the oil. The sauce wasn't especially great... I would want to try a dramatically different style with the lentils next time.
