Spelt Tagliatelle with Salmon Cream Sauce


I finally got a chance to try making pasta with spelt flour. I had a hunch that it would work well because spelt, like its brother wheat, has a good amount of gluten.

Pasta:
  • 1/2 cup spelt flour
  • 1 egg
  • salt
  • 2 drops of olive oil
Sauce:
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 3/4 cup milk
  • 1/2 cup smoked salmon, broken into pieces
  • lemon juice
  • salt and pepper
The sauce is just a basic cream sauce, with smoked salmon added at the end, then seasoned with lemon juice, salt, and pepper to taste.

The spelt pasta worked out well, and the sauce is a great (especially when you consider how simple it is).

PASTA LESSON: I've finally realized that pasta dough shouldn't be kneaded very much; As it gets kneaded, more flour is added to prevent sticking and this makes it dry. The extra kneading also makes the dough tougher and harder.
