Vij's Beet Salsa


  • 13 oz beets
  • 4 oz daikon
  • 1/2 cup cilantro, chopped finely
  • 1 large, firm tomato
  • 1/2 Tbsp lemon juice
  • Salt and Pepper
Make sure that you use a firm tomato, otherwise the dish will be ruined. Cut the beets, daikon, and tomato up into very fine dice. Mix in the lemon juice, and salt and pepper to taste. Let it marinade for a couple hours.

This is a great little side dish to accompany something meaty or saucy.
