Peanut Butter Meltaways

 
These are easy and quick chocolate treats that feel cool in your mouth, and just melt away as you suck on them. 

880 g Milk Chocolate, pre-crystallized
200 g Coconut Fat, melted
270 g Peanut Butter, warmed to approximately 36C

1)  Combine the milk chocolate, coconut fat, and peanut butter.
2)  Agitate by tabling on a marble slab until cool and tempered, but still fluid.
3)  Pour into a 12"x12"x1/2" frame placed on parchment paper.  Allow to crystallize.
4)  Dust one size of the slab with confectioners' sugar.
5)  With the dusted side down, cut the slab into rectanges on a guitar, using the 15mm and 30mm cutters.
6)  Dredge each piece in the confectioners' sugar.  Shake off excess.
